Ingredients:
- 4lb. whole hen,cut in pieces
- 5 large spoons of shortening
- 2 cups water
- 4 large garlic cloves
- 1 bay leaf
- Pinch of salt, red pepper, Black pepper
- 1 T ground cinnamon
- 1 spring of thyme
- 1 sprig of fresh rosemary
- String to tie legs
Directions:
Rub hen on the inside and out with shortening. Mix together garlic and seasonings and place in the cavity of chicken. Tie the legs together.
On the top stove burner, heat a large heavy pot. Brown the breast and back of chicken. Add water and baste.
Preheat over to 350 degrees. Cover and Bake for one and a half hours. Baste occasionally. Oven temperatures vary, make sure the chicken is cooked until tender.
